The Hemp or Bhang seeds come from bhang (hemp, cannabis, marijuana plant). They don’t have any psychoactive properties, unlike the bhang leaves. Bhang seeds are considered very nutritious and can be used in many recipes. They can also be used to make hemp oil or hemp milk, a great substitute for milk for vegans.
Bhang Ki Chutney (Hemp Seeds Chutney) is a simple pahadi accompaniment popular in Uttarakhand households.
Bhang seeds are non-psychoactive; hence, this chutney is safe for all, including children.
Ingredients
For the Chutney you will require:
1/2 cups Hemp Seeds
1 Cup Fresh Coriander Leaves or Cilantro
2 Green Chillies depending on spice level
2 tbsps. Chopped Ginger
3 or 4 Peeled Cloves of Garlic
1 tbsp. Salt, preferably Himalayan Pink Salt
Lime Juice for tanginess
For Tempering you will require:
1 tbsp of Ghee
2-3 Whole Red Chilli, preferably Himalayan Monal’s Red Chilli
Chutney Preparation Process:
Add Hemp Seeds to pan & dry roast on low heat until slightly brown up to 3-4 minutes and keep stirring.
Remove pan from heat and let it cool.
Once cooled, add to blender along with Coriander leaves, Green Chillies, Ginger, Garlic, Salt and Lime Juice.
Add 1/2 cups of water & blend to make smooth chutney.
Chutney Tempering Process:
Heat Ghee in pan on medium heat.
Once hot, add Dry Red Chillies and sauté for 4-5 seconds
Pour tempering over chutney & mix well
Serve Chutney at Room Temperature
