Mexican Red Rice (Veg)

Mexican Red Rice prepared from below cooking style can be eaten plain because of it’s fluffiness and rich taste as explained in cooking method below.

Cooking Mexican Red Rice for 4 People Party

 

Ingredients:

½ Onion peeled & chopped finely
1 tbsp Garlic
1 tbsp Farm Fresh Cumin whole
1 tbsp Farm Fresh Turmeric Powder from Himalayan Monal
1 tbsp Farm Fresh Red Chili Powder from Himalayan Monal
1 tbsp Farm Fresh Cumin Powder from Himalayan Monal
1 tbsp Dried Oregano
⅓ Cup Tomato Puree
1 Cup Organic Red Rajma from Himalayan Monal, cooked prior
¾ Cup Fresh Kernels of Sweet Corn
1 Red Ripe Tomato Diced
4 Green Chilies or as per spice requirement
1 Cup of aromatic Red Rice from Himalayan Monal
Salt to taste
Water as needed
Coriander for garnishing

Cooking Method:

Heat Oil in a large pan. Stir fry Garlic and Onions for 4-5 minutes until soft
Add all spices- stir cook for 30-45 seconds
Add remaining ingredients with the Rice, Salt and Water (around 2 Cups)
Bring to Boil. Cover and Cook for 8-10 Minutes or so until rice is done
Serve garnished with Fresh Coriander
